I took Latin in high school but I barely remember anything other than amo, amas, amat, etc. (that's like the required learning for any Latin student to get a handle on the different endings of Latin verbs) so that doesn't really count IMO (also because it's a dead language, but it's quite handy to take because Spanish, French, and some other of the romance languages derive from Latin so you take Latin then you'll have an easier time learning Spanish or French.  Or so I've heard).  So basically I know no other foreign languages.  I will take Russian in the fall, though, so I can add that to my foreign language list.

One I really want to learn is Welsh, and Gaelic (Irish or Scottish) wouldn't be so bad to learn either.

Too bad they aren't offered at UCI :/ or else I would take them.
